This was an experiment with what I had on hand in my kitchen and not much time for cooking. It turned out to be really quite delicious! Cooking time is reduced greatly if you have some cooked potatoes from a previous day in your fridge. Just cut them up and add them.
In a large pan, cook in a cup of water:
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon ginger, grated
1-inch piece turmeric, chopped
After a few minutes of cooking, add:
1 teaspoon cumin powder
1 teaspoon coriander
1/4 teaspoon cayenne pepper
some freshly ground black pepper
Then add:
1 small potato, diced
1 medium sweet potato, diced
1 medium yam (the orange sweet potato), diced
1/2 cup tomato pulp/passata
2 cups water
1/2-1 teaspoon salt
Cover the pan and cook until the potatoes are almost soft & then add:
1 can black beans, drained & rinsed
1 jar corn, drained & rinsed
2 big handfuls spinach
Simmer until everything is cooked.
Serve. Delicious.
