This smoothie makes even the greyest day seem brighter! It's not just pretty though, beetroot is a great source of iron and vitamin C, the perfect combination since vitamin C aids in the absorption of iron. The cashews give it a deliciously creamy texture, plus protein which keeps hunger pangs at bay.
Makes two 250ml servings
1 cup coconut water
½ small beetroot (about 30g)
1 small peeled carrot (chopped is about ¼ cup)
1 small handful cashews (20g, or just under ¼ cup)
1 peeled orange (about 165g)
1 medjool date, pitted
2 cubes frozen pineapple (optional, but worth it)
Blend everything together until smooth and creamy. The frozen pineapple isn’t essential but it does give it that extra sweet tanginess. Pour into two glasses and sprinkle some hemp hearts on top for extra prettiness (plus a few omega-3s)
