I love sweet potatoes, so it was inevitable that sooner or later I would make a sweet potato dip! If you want to make a sweet version, just leave out the garlic and maybe add a sprinkling of nutmeg and cinnamon. I haven't tried it, but I think it might work..
2 sweet potatoes (450g)
1 clove garlic (crushed)
juice of half a lemon
1 tablespoon almond milk
pinch of salt
Peel the potatoes and cut them into small pieces. Steam them for about 25 minutes, or until completely soft. Put the sweet potato in a food processor with the other ingredients & blend until completely smooth. Spoon the creamy mixture into a bowl & let cool. Grind some black pepper on top & serve.
