This recipe was inspired by Mimi Kirk & Mia Kirk White's 'Apple Sunrise' from their wonderful book Raw-Vitalize. I love their idea of mixing chopped apple with almond butter. Not only does it add taste and texture, you are also getting added protein which will keep you feeling satisfied for longer. If you haven't got almond butter, you could try cashew butter. Peanut butter would be too overpowering.
