Eating healthily doesn't have to mean sad, tasteless meals. On the contrary, a plant-based dish should be colourful and tasty! Remember that the more colour, the more phytonutrients! I'm not one for following recipes and most of the time (apart from when making vegan cheese or baked goods) I just make up the recipe as I go along. Sometimes the best meals come about that way!
